Baked Salmon with Orange-Ginger Glaze
My family loves salmon, so I am always looking for new and easy ways to prepare it. This recipe is one that you can whip together in about 5-10 minutes and let the salmon marinate while you go about preparing the side dishes and setting the table. Then, when you’re ready, simply remove the salmon fillets from the marinade and pop them in the oven. Before you know it, a tasty dinner is ready and everyone thinks you have been sweating over the stove all afternoon!
Ingredients:
- 4 Salmon fillets (approximately 6 oz. each)
- 1/2 cup orange juice
- 1/4 cup soy sauce
- 1/4 cup Dijon mustard
- 2 Tbsp freshly peeled & grated ginger (add more if you love ginger)
- 2 Tbsp honey
- cooking spray (I prefer “Pam” Coconut cooking spray, since it doesn’t conflict with flavors
- Green onions (optional)
Instructions
Making the Marinade
Whisk together the orange juice, soy sauce, mustard, ginger and honey until well-blended. Set aside while you prepare the salmon fillets.
Preparing the Salmon
Gently rinse the salmon fillets under cold water and pat dry with paper towels. Then place them in a large Ziploc bag (I put this in a deep dish baking pan or bowl for reinforcement and in case of leakages).
Next, pour half of the marinade over the salmon fillets and seal the Ziploc baggie well. Rotate the bag around to make sure that the marinade evenly coats the fillets .
Place in the refrigerator for at least 30 minutes to marinate, turning over halfway through.
Baking the Salmon
Preheat oven to 425 degrees
Covar a large baking sheet with foil and spray with non-stick cooking spray.
Remove salmon fillets from marinade and discard the marinade.
Bake for approximately 12-15 minutes, depending on the thickness of the fillets.
Serve each Salmon fillet with a spoonful of the reserved marinade on a bed of freshly steamed rice, topped with green onions and a side of your favorite vegetable. What could be more simple AND more delicious?!?
