Pumpkin Spice Bundt Cake (Gluten Free)

Wow! This cake takes it all!!! It is so moist and full of flavor…and, it's Gluten-Free 🙂 If you haven't tried "Gluten Free Heaven" Flour Mixes, then you don't know what you're missing! They have mastered the secret to GF baking – you will never know it's GF. A big shout out to Dixie Crystals for the original version of this recipe…I made a few changes in order to make it GF and allergy-friendly for my family. Thank you to Dixie Crystals and GF Heaven 🙂

Cake:

  • 1 3/4 Cups *Gluten Free Heaven" Cake & Pastry Flour (*I have not made this cake with any other GF flours; please note that all GF Flours are not created the same and results will vary if you use a different GF Flour)
  • 3/4 + 1/8 teaspoon *Xanthan Gum (*This must be added for “GF Heaven Flours” since they do not contain it; leave out if your GF Flour already contains it)
  • 1 teaspoon GF Baking Powder
  • 1/2 teaspoon GF Baking Soda
  • 2 teaspoons Ground Cinnamon
  • 1/2 teaspoon Ground Ginger
  • 1/8 teaspoon Ground Cloves
  • 1 teaspoon Salt
  • 1 Cup + 2 Tbsp Unsalted Butter (Very soft, but not melted)
  • 1 Cup Extra Fine Granulated Sugar (I always use Dixie Crystals)
  • 3 Large Eggs (room temperature)
  • 2/3 Cup Canned Pumpkin (I used Libby’s)
  • 1/3 Cup Orange Juice (I used “no pulp” kind)

Glaze:

  • 2/3 Cups Confectioner’s Sugar ((Powdered); plus more if you want a thicker consistency)
  • 2 Tbsp Orange Juice
  1. Set oven rack in the middle position; Preheat oven to 350 degrees.
  2. Butter and flour Bundt pan (you can also use a 9 x 5 – inch loaf pan); set aside.
  3. In a medium-sized bowl, whisk together the GF Flour, Xanthan Gum, Baking Soda & Powder and Spices; set aside.
  4. Using a Stand or Handheld Mixer, fitted with the paddle attachment, beat the Butter until light & fluffy; add the Granulated Sugar and blend until thoroughly mixed and fluffy.
  5. Add the Eggs, one at a time, blending well after adding each Egg; scrape sides of bowl often; whip until the mixture is very light & fluffy.
  6. Next, add the Canned Pumpkin and mix until blended.
  7. Add the Dry Ingredient mixture and Orange Juice in 3-4 segments, mixing and scraping bowl and paddle well between each addition.
  8. Scrape the batter into the prepared Bundt Pan; place in the preheated oven on the middle rack and bake for 45 minutes (check the cake around the 30-35 minute mark to make sure it isn't browning too much – if it is, cover loosely with a piece of aluminum foil); test doneness after 45 minutes with a toothpick and pressing lightly on the top to see if it springs back; bake an additional 15-30 minutes, depending on your oven (my cake was ready after 45 minutes).

  9. Once cake is done, remove from oven and let cool in the pan for approximately 10-15 minutes before turning out onto a cooling rack.
  10. While the cake is cooling, thoroughly whisk the Powdered Sugar and Orange Juice together in a small bowl until desired consistency is reached; spoon the Glaze over slightly warm or completely cooled cake.
  11. Serve with or without Vanilla Ice Cream and Enjoy! 🙂

*Use the “Spoon & Sweep” method for measuring the GF Flour: use a spoon to fill the measuring cup with the desired amount of flour, then scrape across the top with the back side of a knife to level off.

Danish Butter Cookies ~ Gluten Free

These delicious little butter cookies just melt in your mouth. And, they’re made with just 4 simple ingredients 🙂 I have made these cookies using several different Gluten Free All-Purpose flour mixes and found that the “Cup 4 Cup” brand worked the best…they taste amazing and are slightly crisp on the outside and light and buttery throughout! These cookies just moved to the TOP of my Favorites list 😉
A HUGE “Thank You” to Shelly Jaronsky (Dixie Crystals) for sharing the Original version of this recipe – I tweaked it a little to make it Gluten Free worthy.

  • 1 Cup Salted Butter (room temperature)
  • 3/4 Cup Powdered Sugar
  • 2 tsp Vanilla Extract
  • 2 Cups “Cup for Cup” All-Purpose Flour (*Use the “Spoon & Sweep” method when measuring your flour – spoon the flour to fill a 1-Cup measuring cup, then scrape off the top with the backside of a knife; do not simply scoop the flour out of its container with the measuring cup – this will pack the flour, resulting in too much flour needed for the recipe.)
  1. Gather the ingredients.
  2. Line 1-2 baking sheets with Parchment Paper or baking mats; set aside.
  3. Using a Stand Mixer, fitted with the Paddle Attachment, cream the Softened Butter, Powdered Sugar and Vanilla on the Medium setting (#4) for about 5 minutes, scraping down the inside of the bowl as needed; the mixture should be light in color and whipped.
  4. Next, lower the speed of the Mixer to the lowest setting and gradually add the GF Flour, 1/2 cup at a time; Dough will be soft and smooth.
  5. Place a large Star tip into a piping bag (or large plastic resealable bag) and transfer the dough to the piping bag.
  6. Pipe the dough onto the prepared cookie sheets in Rosette or Circle designs/shapes. The dough does not spread very much, if at all, so you can pipe a lot of cookies per sheet – I usually pipe 20 – 2″ cookies per sheet.
  7. Sprinkle each cookie with sprinkles/colored sugar, if desired.
  8. Next, place the cookie sheets into the refrigerator for 30-40 minutes to chill the dough – this helps them maintain their shape while cooking.
  9. Meanwhile, preheat the oven to 300 degrees.
  10. Once the cookies are finished chilling, bake them for 18-20 minutes, or until the edges turn a light, golden brown.
  11. Cool the cookies for about 5 minutes on the cookie sheets before transferring them to wire cooling racks to cool completely.
  12. Enjoy with a hot cup of cocoa, tea or coffee…or a glass of cold milk 😉

Spicy Cheddar Cheese Crackers ~ Gluten Free (Just Like “Cheese Straws”)

Do you remember those wonderful “Cheese Straws” that were always around in abundance during the Holidays? Well, these little “Spicy Cheddar Cheese Crackers” will take you right back to your childhood! And, if you’re Gluten-Free, fear not, these are not only Gluten-Free, but are so easy to make and only require 7 ingredients (if you include water) 😉 I chose to cut my dough into leaf shapes for the Autumn season, but any shape will do (Christmas Trees, Snowmen, Wreaths, Holly Leaves, etc.) These make the perfect little Holiday Gifts 🙂

Note: The original non-GF recipe can be found in just about every cookbook out there, but I want to give credit to Ree Drummond (aka: “The Pioneer Woman”) for her non-gf version of this recipe that I adapted to “fit” our family (please see the “Copycat Cheez-It” version for the GF and non-spicy recipe for these same crackers) 😉

  • 2 Cups Sharp Cheddar Cheese
  • 1 Cup GF All-Purpose Flour (I use “Caputo” brand – it makes an incredible dough to work with)
  • 4 Tbsp Salted Butter (cold and cut into small pieces)
  • 1/2 tsp Kosher Salt
  • 1/2 tsp Seasoned Salt (I use “Season All”)
  • 1/8-1/4 tsp Cayenned Pepper (I use 1/4 tsp for a little more “kick”)
  • 3 Tbsp Ice Water
  1. Place all of the ingredients, except for the Water, into a Food Processor and pulse until the mixture looks like “sand.”
  2. With the Food Processor running, slowly add the Ice-Cold Water, one Tbsp at a time, through the shoot until the dough forms a large ball.
  3. Wrap the Cheese dough ball in plastic and refrigerate for 1 hour.
  4. When ready to bake, preheat oven to 350 degrees.
  5. Line 1-2 baking sheets with Parchment Paper or Silicone Baking Mats; set aside.
  6. Roll the dough out to 1/4″ thickness on a lightly floured surface, cut into desired shapes and place on the prepared baking sheets.
  7. Bake for 15-18 minutes or until golden brown.
    *See notes for “crisping” up crackers if they turn soft.
  8. Allow the crackers to cool completely on a wire rack to develop the flavors and desired crispness.
  9. Enjoy 🙂

*Note: if your crackers get a little soft, simply toss them onto a baking sheet and re-heat in a 275 degree oven for about 8-10 minutes. Let cool and gobble them up!

Maple Shortbread Sandwich Cookies ~ Gluten Free

If you like the flavor of Maple, you’re going to love these delicious Maple Shortbread Sandwich Cookies! I make them as single shortbread cookies and as sandwich cookies with a yummy Maple Buttercream Filling for those who prefer a little extra touch of Maple. Either way, these little cookies melt in your mouth and are sure to please your friends and family during the holidays 🙂 Enjoy!

The Maple Shortbread Cookie:

  • 10 Tbsp Unsalted Butter, softened ((1 stick + 2 Tbsp))
  • 1/4 tsp Salt
  • 1/4 Cup Powdered Sugar
  • 1/4 Cup Maple Sugar (I do a heaping 1/4 cup ;))
  • 1/2 tsp Maple Extract (increase to 3/4 – 1 tsp if you want a stronger Maple Flavor)
  • 1 1/2 Cups All-Purpose Gluten Free Flour (I use Better Batter)
  • 1/2 tsp Xanthan Gum (add if your all-purpose GF flour does not contain Xanthan Gum)

The Maple Buttercream Filling:

  • 2 Tbsp Unsalted Butter, softened
  • 1/4 tsp Salt
  • 1/2 tsp Vanilla Extract
  • 1/4 tsp Maple Extract
  • 1 Tbsp Pure Maple Syrup (I use Grade A, but Grade B is also fine)
  • 1 1/2 Cups Powdered Sugar
  • 1 Tbsp Whole Milk (1%, 2% and Skim is also fine)

Making the Cookie Dough:

  1. Gather all the ingredients needed for the cookies.
  2. Using a Stand or Handheld Mixer, combine the Butter, Salt, Maple Sugar and Maple Extract; beat until creamy and smooth.
  3. Add the Powdered Sugar to the Butter mixture and mix on the lowest setting, scraping the sides of the bowl as needed, until well-blended and smooth.
  4. In a small bowl, measure out the 1 1/2 Cups Flour using the “spoon and scrape” method (using a spoon, scoop out the GF Flour into a Dry Measuring Cup, overfilling the cup; then scrape off the excess flour back into the flour bag/container using the back edge of a knife); gently pour the measured GF Flour into the small bowl.
  5. Add the Xanthan Gum (if your GF Flour mix doesn’t contain it) to the GF Flour in the small bowl and mix well.
  6. With the mixer set on the lowest setting, gradually add the GF Flour mixture, 1/2 cup at a time, to the Butter mixture; mix well and scrape sides of bowl as need between each addition of the Flour.
    Note: the cookie dough will be crumbly, but should hold together when squeezed into a ball; if the dough does not hold together, add 1/2-1 more Tablespoon of softened unsalted butter.
  7. Form the cookie dough into a ball and wrap in plastic wrap; Refrigerate for 30 minutes.
  8. While the dough is in the refrigerator, line 1-2 cookie sheets with parchment paper or baking mats; set aside.
  9. Preheat oven to 325 degrees.
  10. After 30 minutes, remove cookie dough from refrigerator and cut in half for a more manageable portion of dough to roll out.
    Note: if the dough is refrigerated for more than 30 minutes, set it out on your kitchen counter for about 15-20 minutes to soften up a little before trying to roll it out.
  11. Once the dough is ready, roll it out onto a lightly floured surface to about 1/4″ thickness.
  12. Using the desired cookie cutter/cutters, cut dough into shapes and place onto the prepared cookie sheet/sheets.
  13. Bake for 18-20 minutes, or until cookies are a light golden brown; cool on baking sheets. Enjoy as single Maple Shortbread Cookies or fill with the Maple Buttercream filling (recipe below).

The Maple Buttercream Filling:

  1. If making sandwich cookies, gather the ingredients for the Maple Buttercream Filling.
  2. Using a Stand or Handheld Mixer, combine all of the Filling ingredients, being sure to gradually add the Powdered Sugar, 1/2 cup at a time; adjust the Milk or Powdered Sugar as needed for the desired consistency (you want the filling to be thick and creamy).
  3. Once the cookies are completely cooled, you are ready to fill :).
  4. Using a small knife or the back of a spoon, spread the desired amount of filling onto the backside of one of the cookies; then gently press another cookie on top of the filling and scrape any excess filling from the sides of the cookies with the knife or spoon.
  5. Serve with your a hot cup of tea or coffee and sit back and enjoy 🙂

Copycat Cheez-It Cheddar Cheese Crackers ~ Gluten Free

Copycat Cheez-It Cheddar Cheese Crackers ~ Gluten Free

These are the yummiest Gluten-Free Cheese Crackers I have EVER tasted!!! They taste just like Cheez-It crackers! Plus, they are SO easy to make and only 6 ingredients are needed 🙂 I love them with my Roasted Red Pepper and Tomato soup…or just by themselves! A big bag of these yummy crackers would make a perfect treat for anyone.
*This recipe was adapted from a Ree Drummond (aka: “The Pioneer Woman”) recipe (“Homemade Cheddar Crackers”)…of course! Thank you SO much for sharing!

  • 2 Cups Sharp Cheddar Cheese (Shredded)
  • 1 Cup Gluten Free All-Purpose Flour Blend (I use Caputo brand – it’s a little more expensive, but well worth it – it performs like “regular” flour and is not gritty)
  • 4 Tbsp Salted Butter (Kept cold & cut into small pieces)
  • 1/2 tsp Kosher Salt
  • 1/2 tsp Seasoned Salt (I use Season-All)
  • 3 Tbsp Ice Water
  1. Place all of the ingredients, except for the Ice Water, into a Food Processor and pulse until the mixture looks like sand.
  2. With the Food Processor running, slowly add the Ice Water, one Tablespoon at a time, through the shoot until the dough forms a ball.
  3. Wrap the Cheese-dough ball in plastic and refrigerate for 1 hour.
  4. When ready to bake, preheat oven to 350 degrees.
  5. Line 1-2 baking sheets with silicone baking mats or parchment paper; set aside.
  6. Roll out the dough to 1/4″ thickness and cut into desired-size squares using a pizza cutter ~ I use a straight-edge ruler and usually cut my dough into 1″ x 1″ squares.
  7. Place the squares onto the lined baking sheets.
  8. Using the smaller end of a chop stick or wooden skewer, poke a small hole into the center of each square.
    Note: If desired, you can sprinkle the crackers with a little kosher salt at this stage, but they really do not need it 😉
  9. Bake the crackers for 15-18 minutes or until golden brown; I bake mine for the maximum amount of time since I prefer mine on the more crispy side.
  10. Allow to cool completely to fully develop the flavors and desired crispiness.
  11. Enjoy with your favorite soup, salad or all on their own 🙂
  12. Note: if your crackers get soft, simply toss them onto a baking sheet and re-heat in a 275 degree oven for about 8-10 minutes.

These Oatmeal Cookies are so buttery and chewy that they melt in your mouth. I also love the fact that there are only 8 ingredients needed…all ingredients that we usually have on-hand.
Of course, a HUGE “Thank You” to Ree Drummond (aka: The Pioneer Woman) for sharing the original recipe for these wonderful cookies! The only thing that I changed was swapping out the regular flour with Gluten-Free Flour 😉 These cookies earned a 5-Star review in our house!

  • 2 Cups Dark Brown Sugar (firmly packed)
  • 1 Cup Salted Butter, Softened
  • 2 tsp Vanilla Extract
  • 2 Large Eggs
  • 1 1/2 Cups Better Batter All Purpose Gluten Free Flour Mix (you can use other brands, but make sure they contain Xanthan Gum – results will vary)
  • 1 tsp Salt (table)
  • 1/2 tsp Baking Soda
  • 3 Cups Gluten-Free Old Fashioned Oats (I use Quaker Brand)
  • 1/2 Cup Finely Chopped Nuts (optional ~ I did not include nuts due to nut allergies)
  1. Preheat oven to 350 degrees.
  2. Gather the ingredients.
  3. Line 1-2 cookie sheets with Parchment Paper or a baking pad. Set aside.
  4. Using a stand mixer, with the paddle attachment, combine the Brown Sugar and Softened Butter until light and fluffy.
  5. Next, add the Vanilla and the Eggs, one at a time, scraping down the sides of the bowl after adding each Egg.
  6. In a separate bowl, combine the GF Flour, Salt and Baking Soda until well-blended.
  7. Slowly add the Flour mixture to the Butter mixture, one cup at a time, mixing until just combined after each addition.
  8. Next, add the Oats (and Chopped Nuts, if using), one cup at a time, scraping the sides of the bowl after each addition. Mix until all Oats are blended (be sure to check the very bottom of the bowl for any dry oats).
  9. Using a cookie scoop or spoon of your desired size (I used a 2″ cookie scoop), drop cookie dough balls onto prepared cookie sheets several inches apart (they spread!)
  10. Bake for 12-14 minutes (longer if you want crispy cookies).
  11. Cool on the cookie sheets for about 2 minutes before transferring them to a wire cooling rack.
  12. Enjoy with a cold glass of milk or a bowl of Vanilla Ice Cream 🙂

Zucchini Bread – Gluten-Free & Dairy-Free

Zucchini Bread – Gluten-Free & Dairy-Free

This moist, delicious Gluten-Free, Dairy-Free Zucchini Bread is packed full of nutrients and spices! I always make a double batch (this recipe is for 2 loaves), because it disappears very quickly in our house 😉 I attempted to make a Vegan version (substituting applesauce for the eggs) for my daughter, but it turned out like a VERY wet brick…I will continue trying different Vegan versions until I succeed! In the meantime, let me know what you think of this GF, DF version 🙂

  • 3 Cups Zucchini, shredded (water squeezed out)
  • 4 Cups Better Batter All Purpose Gluten Free Flour Mix (You can use other cup-for-cup GF flours, but end results may vary)
  • 1 Cup Granulated Sugar
  • 2-3 Tbsp Granulated Sugar (for sprinkling in both pans)
  • 1/4 Cup Light Brown Sugar (Firmly Packed)
  • 5 tsp Baking Powder, GF
  • 1 1/2 tsp Ground Cinnamon
  • 1/2 tsp Salt
  • 1/4 tsp Nutmeg
  • 1 Tbsp Lemon Zest
  • 1 1/2 Cups Plain Rice Milk (or any other non-dairy unflavored milk (if you’re not DF, you can use Skim, 1%, 2% or Whole Milk))
  • 1/4 Cup + 2 Tbsp Vegetable Oil (I use Canola)
  • 2 tsp Vanilla Extract
  • 2 Large Eggs (lightly beaten)
  • Non-Stick Cooking Spray
  • 1/2 Cup Pecans or Walnuts, chopped (optional)
  1. Preheat oven to 350 degrees.
  2. Gather the ingredients.
  3. Spray two 8″ x 4″ loaf pans with the non-stick cooking spray. Sprinkle all sides and bottom of each pan with about 1 Tbsp Granulated Sugar. Set aside.

The Flour Mixture:

  1. In a large bowl, combine the GF Flour, 1 Cup Granulated Sugar, Light Brown Sugar, Baking Powder, Spices and Lemon Zest. Mix thoroughly and form a well in the center. Set aside.

The Zucchini Mixture:

  1. Using a food processor or handheld grater, shred the Zucchini and place on paper towels in a large bowl to absorb the water.
  2. In another large bowl, mix the milk, oil, vanilla and eggs until well combined. Add the shredded zucchini and mix well.

Making the Batter:

  1. Add the Zucchini Mixture to the center of the Flour Mixture.
  2. Mix well using a fork to start with to help break up the Zucchini. Then switch to a large spoon to ensure that you get all of the ingredients off of the bottom. (Note: if you’re adding nuts, do so at this step).

Baking the Bread:

  1. Divide the batter between the two prepared loaf pans. If desired, you may sprinkle the tops with additional granulated sugar.
  2. Bake on the center rack for 50-60 minutes or until toothpick comes out clean.
  3. Cool in their pans for about 10 minutes.
  4. Transfer loaves to wire cooling rack and let cool completely before slicing.
  5. Enjoy!

Do you like Coffee Cake? Are you Gluten-intolerant or have Celiac’s and miss eating yummy treats, like Brown Sugar Cinnamon Coffee Cake? Well, now you can have your coffee cake and eat it, too 🙂 This is truly one of the BEST Coffee Cakes I have ever eaten!!! A HUGE “Thank You” to Audrey from “Mama Knows Gluten Free” for sharing this delicious recipe…my entire family thanks you 🙂

The Cake Ingredients:

  • 3 Cups All-Purpose Gluten Free Flour, Sifted (I use King Arthur brand; sifted)
  • 1 1/2 tsp Xanthan Gum (if your GF Flour Blend doesn’t already have it)
  • 1/4 tsp Salt
  • 1 Cup Granulated Sugar
  • 4 tsp Baking Powder (make sure it’s GF)
  • 1 1/2 Cups Whole Milk (you can also use Almond, Rice, Cashew or Coconut Milk for a dairy-free option)
  • 2 Large Eggs
  • 2 tsp Vanilla Extract
  • 1/2 Cup Unsalted Butter, melted (or use Earth Balance brand for a dairy-free version)

The Brown Sugar-Cinnamon Topping

  • 1 Cup Unsalted Butter, softened (or Earth Balance for dairy-free)
  • 1 Cup Light Brown Sugar, packed
  • 2 Tbsp GF All-Purpose Flour
  • 1 Tbsp Ground Cinnamon

The Glaze Ingredients:

  • 2 Cups Powdered Sugar
  • 5 Tbsp Whole Milk (or dairy-free milk of your choice)
  • 1 tsp Vanilla Extract

Making the Cake:

  1. Preheat oven to 350 degrees.
  2. Spray a 9″ x 13″ baking pan (preferably glass) with non-stick cooking spray. Set aside.
  3. Gather the ingredients needed for Cake.
  4. Melt the Butter and set aside.
  5. Using a stand or handheld mixer, fitted with the paddle attachment, mix the GF Flour, Xanthan Gum, Salt, Sugar and Baking Powder on Low until thoroughly blended.
  6. Add the Milk, Eggs and Vanilla to the Flour mixture, blending until thoroughly mixed.
  7. Slowly drizzle the Melted Butter into the Flour-Milk mixture, mixing until fully incorporated.
  8. Pour batter into the prepared baking pan. Set aside while you prepare the Brown Sugar topping.

Making the Brown Sugar-Cinnamon Topping:

  1. Using a Stand or handheld mixer, fitted with the paddle attachment, combine the softened Butter, Brown Sugar, GF Flour and Cinnamon until thoroughly mixed and creamy.
  2. Drop this Brown Sugar mixture by spoonfuls onto the coffee cake batter in the baking pan making sure to cover the surface equally.
  3. Using a sharp knife, thoroughly swirl the Brown Sugar mixture throughout the coffee cake batter.
  4. Bake in preheated oven for about 35-40 minutes, checking after 30 minutes. Cake is done when a toothpick inserted into the middle comes out clean.

Making the Glaze:

  1. In a large bowl, whisk together the Powdered Sugar, Milk and Vanilla until smooth. Drizzle over the warm Coffee Cake and let set for about 10 minutes. Slice into desired-size pieces and Enjoy with a glass of ice-cold milk :)!

Store in an air-tight comtainer. Re-heat slices in microwave for about 10-15 seconds 🙂

This Lemon Pound Cake turns out moist, tasty and delicious every time! Made with Fresh Lemon Juice and Lemon Zest puts this GF Lemon Pound Cake over the top! I have learned to make TWO cakes, since my family tends to inhale the first one within a few hours 😉

Cake Ingredients:

  • 1 1/4 Cups King Arthur Gluten Free Multi-Purpose Flour (Sifted)
  • 1 tsp Baking Powder
  • 1/2 tsp Salt
  • 1/4 tsp Xanthan Gum
  • 1 1/4 Cup Granulated Sugar
  • 2 Tbsp Lemon Zest (about 2 lemons)
  • 1 Tbsp Lemon Juice (from the Lemons used for Zest)
  • 4 Large Eggs
  • 1/2 Cup Cream Cheese (softened)
  • 1 1/2 tsp Vanilla Extract
  • 1/2 Cup Unsalted Butter (Melted)

Glaze Ingredients:

  • 1/2 Cup Powdered Sugar
  • 2 tsp Lemon Juice

The Cake Instructions:

  1. Preheat oven to 350 degrees.
  2. Grease and flour an 8 1/2″ x 4 1/2″ loaf pan. Set aside.
  3. In a large mixing bowl, whisk the Flour, Baking Powder, Salt and Xanthan Gum until blended. Set aside.
  4. In a food processor, combine the Granulated Sugar and Lemon Zest until thoroughly mixed (about 7 pulses).
  5. Next, add the Lemon Juice, Eggs, Softened Cream Cheese and Vanilla Extract to the Sugar mixture. Process until completely blended (about 20-30 seconds)
  6. With the Food Processor running on Low, slowly drizzle the melted Butter into the Cream Cheese mixture. Continue processing until mixed completely (about 30-40 seconds).
  7. Add this Cream Cheese mixture to the Flour mixture in the large bowl. Whisk until thoroughly blended and smooth.
  8. Pour the batter into the prepared loaf pan. Bake for 15 minutes at 350 degrees. Decrease the temperature to 325 degrees and bake for an additional 35-40 minutes, or until cake is a light golden brown and toothpick inserted into the center comes out clean.
  9. Let cool in the pan on a wire rack for about 10 minutes. Remove cake from pan and continue cooling on the wire rack until completely cooled (about 1 1/2 hours).

The Glaze Instructions:

  1. In a small bowl, whisk together the Powdered Sugar and Lemon Juice until smooth, adding more sugar if not thick enough.

Putting it all Together:

  1. Once the cake is completely cooled, drizzle the Glaze over the top of the cake, letting it run down the sides. Sprinkle fresh Lemon Zest on top and let Glaze set for about 15 minutes before serving. Enjoy 🙂

Store cake at room temperature in a large plastic baggie, sealed tightly.

Easy Gluten Free Cinnamon-Sugar Coffee Cake

This Gluten Free Coffee Cake is SO moist, tasty and easy to make! It’s the perfect afternoon snack, dessert or breakfast for those weekend sleepovers. An instant hit with our family and friends! 🙂

The Crumb Topping

  • 1/2 Cup Unsalted Butter, Melted (1 Stick or 8 Tbsp)
  • 1/3 Cup Granulated Sugar
  • 1/3 Cup Dark Brown Sugar (Packed)
  • 1 Large Egg Yolk
  • 1/8 tsp Salt
  • 3/4 tsp Cinnamon
  • 3/4 Cup + 1/3 Cup All-Purpose Gluten Free Flour, Sifted (I use Better Batter GF Multi-Purpose Flour)

The Cake

  • 3/4 Cup + 1/3 Cup All-Purpose GF Flour, Sifted (I use Better Batter GF Multi-Purpose Flour)
  • 1/2 Cup Granulated Sugar
  • 1/4 tsp Salt
  • 1/4 tsp Xanthan Gum (use ONLY if your GF Flour Blend doesn’t contain any; Better Batter contains Xanthan Gum, so I do not add it )
  • 1/2 tsp Baking Soda
  • 6 Tbsp Butter, Unsalted (Softened & Cut Into 6 Pieces)
  • 1/2 Cup Sour Cream
  • 2 Large Eggs
  • 1 Large Egg Yolk
  • 1 tsp Vanilla Extract
  1. Gather the ingredients.
  2. Spray an 8″ x 8″ baking pan with non-stick cooking spray. Next, fold a 16″ length of Parchment Paper to a width of 7″ and fit it into the baking pan, so that the excess hangs over the edges for easy removal of the cake. Set aside.

Making the topping:

  1. In a small sauce pan, melt the butter over low heat. Once completely melted, remove from heat and let cool slightly.
  2. Using a whisk, mix in the sugars, salt, cinnamon and egg yolk to the melted butter, thoroughly mixing.
  3. Add the GF Flour to the butter mixture, blending well. The mixture will look like ground meat. Set aside.

Making the Cake:

  1. Place one of your oven racks in the upper-middle position of the oven and preheat oven to 325 degrees.
  2. In a stand mixer, using the paddle attachment, mix the GF Flour, Granulated Sugar, Salt, Xanthan Gum (if needed) and Baking Soda on low until completely blended.
  3. Next, add the Butter to the flour mixture, one piece at a time, mixing on low until butter pieces are no longer visible – mixture will resemble coarse sand.
  4. Add the Sour Cream, Eggs, Yolk and Vanilla to the Flour mixture and mix on medium-high until batter is light and fluffy.

Putting it Together:

  1. Scrape the batter into the prepared baking pan and smooth the top.
  2. Using your hands, break the Topping Mixture into large pea-sized pieces and sprinkle over the top of the batter to completely cover.
  3. Bake for 35-45 minutes, rotating the pan halfway through baking. It’s done when the middle is no longer jiggly and a wooden toothpick inserted into the middle comes out clean.
  4. Let cool in the pan for 30 minutes before removing, using the excess Parchment Paper to lift and pull the cake out.
  5. Place on a platter or cutting board to cut and serve. Enjoy!

**This cake stores well in an air-tight container for about 3 days.
